I cannot tell you how excited I am to say that I finally came up with a brownie recipe using Medjool dates that finally worked. I have been experimenting with dates forever now and could never get the recipe for brownie bites right. The mixture would either come out too soupy, or wouldn’t blend smoothly, or wouldn’t taste “chocolatey enough” and then no one in my family would eat them and I’d be stuck with 20 dates worth of goopy chocolate.
But today I am giving you a recipe for vegan & grain-free brownie bites that are made from dates, are not soupy, are perfectly blended, and are perfectly chocolatey!
SO without further ado…let’s get started!
What you’ll need:
- 15 Medjool dates
- 1/2 Tsp agave nectar
- 2 Tbsp cocoa powder
- 2 Tbsp peanut butter or almond butter (almond butter has a more mild taste & peanut butter will leave you with chocolatey peanut buttery flavored brownie bites)
- Dash of sea salt
- Tsp of vanilla extract
- 1/4 cup warm water
- 1 cup unsweetened shredded coconut
- 1/4 cup vegan chocolate chips (optional)
- food processor
- parchment paper
- baking sheet
- cookie dough scooper
What to do:
- line baking sheet with parchment paper and set aside
- add all ingredients except the water to a food processor
- begin blending
- slowly add in water to get the mixture to combine
- blend until smooth
- pour shredded coconut into a separate bowl
- with cookie-dough scooper, scoop out balls of the mixture and drop into the shredded coconut
- roll until the ball is completely covered
- set ball on the parchment lined baking sheet
- once all of the mixture is rolled into balls, set baking sheet into the freezer to flash freeze for 5-10 minutes
- then enjoy!
- store in a container in the refrigerator!
Now, I’m going to give you the nutrition information, but please don’t be alarmed by the sugar content. Even though these are a healthy version, they are still a treat! The sugars are all natural from the dates and the dates contain natural fibers to help your body digest and process the sugars without greatly spiking your blood sugar.
