Gluten Free Black Bean Brownies

I find myself craving chocolate about 84% of the time. So as you can imagine, I’m a huge fan of anything containing chocolate.

And brownies they usually contain a little bit of chocolate 🙂 which makes them one of my favorites.

Brownies are rich, chocolatey, sweet, decadent, and sadly loaded with sugar, carbs, and calories.

I’ve tried the “I’ll just have a little bite” technique with standard brownies, but let’s be honest that technique does not work. So I’ve experimented with “healthier” brownie options. I’ve made everything from boxed gluten-free brownies to date brownie bites.

Out of all of my concoctions, there is one reigning champion: black bean brownies.

I know, it sounds gross. Beans and dessert, they don’t go together.

Or do they?

They do!  These brownies are chocolatey and sweet and you won’t be able to detect even a hint of beans.

What you’ll need:

  • 1, 15 oz can of black beans
  • 1/3 cup + 2 tablespoons cocoa powder
  • 1 tsp vanilla
  • Pinch salt
  • 1 scant tbsp coconut oil
  • 1 tbsp coffee
  • 2 eggs
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 4 tbsp sugar
  • 1/3 cup milk
  • 1/3 cup + handful for top chocolate chips (I used semi-sweet, but feel free to use whatever chocolate you prefer)

What to do:

  • Preheat oven to 350 degrees
  • Add all ingredients, except chocolate chips to blender
  • Blend
  • Spray 9×9 glass baking dish with nonstick spray
  • Fold in chocolate chips, save a handful for top
  • Pour batter into baking dish
  • Sprinkle remaining chocolate chips on top
  • Bake for 30-35 minutes or until a toothpick comes out of brownies clean
  • Let cool
  • Cut & serve!

These brownies are gluten-free, high in protein, and a good serving of fiber.
