Sweet Potato Pancakes

Sometimes I really just want a syrup-drenched stack of pancakes. Unfortunately, starting the morning off with all that sugar and all those empty calories leaves me feeling grossly full and groggy.

So I’m always looking for sneaky ways to make pancakes without all the unnecessary sugar.

Enter sweet potato pancakes.

I’m sure you’ve seen banana pancakes all over Pinterest, which I am a huge fan of, but I was out of bananas and craving pancakes. I used the sweet potato as the base of the batter like you would a banana.

The batter should be fabulously creamy and bright orange, with flecks of cinnamon and nutmeg throughout. 🙂

*I topped mine with dark chocolate shavings as well, but that was strictly for looks (and for chocolate cravings) and is not included in the nutrition information (because that would just be silliness).
